Easy Bulk Banana Muffins recipe

These easy bulk Banana muffins can be made in no time at all. Eat them hot from the oven or freeze them for quick and easy school or work snacks. When I make a bulk batch of muffins like these I like to slightly vary the flavor by adding a bit of chocolate, coconut or cinnamon to the top or centre... the options are endless! Just remember to gently fold in any extra ingredients so as not to over activate the gluten. You don't want rubbery muffins! Alternatively just add to the top of the muffins

Easy Bulk Banana Muffins

5 Cups Plain Flour 

1 Cup Almond meal

4 t/s baking powder

2 t/s bicarb soda

1t/s Salt

2 t/s vanilla

1 1/2 cups brown sugar

1 cup castor sugar 

4 eggs

1 1/3 cups oil (I used rice bran oil) can substitute for melted butter

700 gram (approx) ripe bananas 

Lightly beat eggs, add sugars, vanilla, and oil and hand mix until combined. Once combined add mashed bananas and stir until bananas are distributed through mix. Set aside. 

Add all remaining ingredients to a large bowl and mix thoroughly. Make a well in the centre and gently add the wet ingredients. Try not to over mix as this will make your muffins rubbery. Once the ingredients are just combined you are ready to start filling your muffin tins. I use paper cases, if you don't uses paper cases remember  to butter/oil your muffin tins/molds.

To vary the flavour of these muffins without all the dishes I like to add extras to the top or centre of the muffin, you could add choc chips, a strudel topper (sugar, cinnamon,oats and butter lightly cooked prior to adding) or a spoonful of cheese cake (cream cheese, egg yolk, sugar and vanilla.

 

Add another spoonful of mix on top of the added choc chip as seen above. Excuse my muffin cases, I purchased the wrong size ☺

This makes approx 30 large muffins. Bake at approx 175 deg for 25 minutes. Please check them to make sure they are cooking well as all overs are different.
